Edison: Food + Drink Lab

My mother in law was in town and we wanted to give her a unique dining experience.  An experience like no other in town.  My husband made reservations for Edison.  Edison as it has coined itself is a Food + Drink lab.  The chemistry that is created in Edison’s “lab” deserves an A+.
Edison’s is located right outside of downtown Tampa across from the University of Tampa campus.  It has been serving up one of a kind dishes in Tampa for 5 years.  It’s menu is unique because it changes daily.  If you see something you’d like to try, try it because it may not be featured again.  The ingredients are fresh and I do mean fresh.  The chef went and picked fresh Chanterelle mushrooms that day for dinner.

Cocktails

Its Hard out there for a Pimm’s  but it was easy going down.  I ordered this cocktail and it was amazing.  I loved the kick of ginger at the end.  My mother in law ordered the 1 2, Punch and more than 2 of this and it will knock you out.  My picture is already blurry because of these cocktails….kidding. I just took a bad shot and it’s the only one I got before these drinks disappeared.

Appetizer: Yellowfin Tuna Tartare

MettleFork is founded on the idea of adventure…boldness..moxie.  Our adventure began by allowing the waitress to choose a random appetizer for us to try.  When she came back with the Yellowfin Tuna Tartare my first thought was this is great because I never would have ordered this.  This was everyones first time trying Yellowfin Tuna Tartare and it was everything.  There are so many elements to this dish but I’ll start with my favorite.  It was a close race between the tuna itself and the mango jalapeño sorbet.  Yes you read correctly this was paired with a scoop of mango jalapeño sorbet.  It was cold, creamy and had a kick and it made the dish in my opinion.  On each side was a mango and soybean salad with an avocado sauce.  The Tuna Tartare was placed atop of fish sauce caramel.  If you ever get a chance to order this from their menu – Do It!  As a bonus I’ll let you in on a secret…if you call a day ahead you can order a pint of the sorbet to take home (I’ll be doing that).  This appetizer was just the beginning of a life changing experience.

Jerk Kurobuta Bone-in Pork Chop

My husband ordered the Jerk Kurobuta Pork Chop.  It came with over a bed of coconut lime gnudi, brussel sprouts, parsnips, cippolini, scotch bonnet brown butter.  Gnudi if you have never had it before has an interesting texture.  It is like gnocchi but creamier.  (*Husband took over*) LET ME TELL YOU ABOUT THAT PORK CHOP–(*SILENCE*).  There  are no words that can describe the excellence of that chop.  I had never a had gnudi until this day.  I blacked out eating it, but all I can tell you is that when I bit into it I descended into heaven and then God himself told me to go back and finish my food–thats when I came to.
Now that we are all past his drama LOL…the pork chop was cooked perfectly, it was the most tender pork chop I’ve ever had.  For those of you who cook pork chops you know how difficult that is to achieve.  The gnudi was great and an experience you will have to have yourself.  If you aren’t in the mood for seafood..order this.  You will not be disappointed.

Cobia a La Plancha

I ordered the Cobia a La Plancha mainly because I wanted to try these famous chanterelle mushrooms.  The Cobia a La Plancha was served atop a bone marrow jus with montpellier artichokes and summer chanterelle mushrooms topped with an organic mache salad and a side of black truffle hash browns. The fish was cooked perfectly.  I’m not sure how expensive it is,  but Tilapia may have just gotten the boot.  The artichokes literally melted when I bit them and the mushrooms…worth every penny.  I’m so excited to say I’ve tasted chanterelle mushrooms when they talk about them on FoodNetwork…I will actually have a basis to go on.  The truffle hash browns were not the traditional hash browns they were cut more like large o’brien potatoes but they were delish.
I loved what I ordered but the best part of dining out with your TasteBudz is that you get to try more than one dish.  I would gladly order the Cobia again as long as the Salmon is not on the menu at the same time.

Faroe Island Salmon a La Plancha

Please fasten your seatbelt and keep your hands and feet inside…get your tastebuds ready for this adventure.  My mother in law also known as Taste Bud Umami (u-mommy) ordered the Faroe Island Salmon a La Plancha.  I almost knocked her out and took her plate it was so good.  Out of all three meals this one was by far the best.  This Faroe Island Salmon a La Plancha was served up with a saffron octopus chorizo risotto, asparagus, sun chokes, pea tips in a romesco broth with some squid ink…say what?  Let me run that back for you…octopus..risotto..sun chokes…squid ink.  This dish may just be the definition of mettle, it was adventurous and bold.  The octopus flavor was so prominent I really couldn’t taste the chorizo but don’t let that be a show stopper.  Neither one of us had ever had squid ink before so we were excited to try it.  To my surprise it had a slightly salty flavor.  The salmon was cooked perfectly and the asparagus had a nice crunch to it.  Everything in this dish worked well together, it was the perfect balance of heaven and earth.  It was sinfully delicious and this wasn’t even my plate but I scraped it clean.

 
When we arrived for with reservations we had to wait a little because the place was jam packed.  However considering the service, food and drinks you’ll understand why.  I’ll gladly wait again to dine at Edison’s.  While Edison’s did offer grilled cheese and fries with homemade ketchup (which is AMAZING) they didn’t have a dedicated kid’s menu and this was considered in my overall review.  Food and drink lab is the perfect name because the science of genuine, high end, yummylicious food is created at Edison’s. I’m still thinking about the food two weeks later.  If you are still reading this and are in Tampa, FL…shame on you you should be at Edison’s by now.
