Easy Homemade Pancakes

Have you ever seen a recipe that says easy homemade pancakes but it turns out they weren't easy to make?  Well, you are not alone.  I too have suffered from pitiful pancakes.  That is actually what led me to write up this easy homemade pancake recipe, except mine actually is easy.  Only a few key ingredients are required and you will be able to whip yourself up some pancakes for breakfast in no time.  I've tried making homemade pancakes before; my failed attempts consisted of pancakes that were either too thin or too thick.  Therefore most mornings pancakes come from a batter out of a box. I mean let's be honest, Aunt Jemima already has it figured out.  However, in an effort not to be defeated I decided to try again.  Researching many tried and true recipes and comparing others recipes against what I would want my homemade pancakes to look and taste like became my focus.  No judgement, but I'm not adding ricotta to my pancakes unless I'm making lemon ricotta pancakes (which just might happen). Alas! I measured and poured and I'm here to tell you these are just right! In fact, my daughter who was skeptical when I said they were homemade asked for thirds. I'm extremely happy I finally perfected a homemade pancake batter.  Here is the recipe so you don't have to worry about the trial and error of figuring it out.

Pancakes

Ingredients
 2 cups Flour
 ½ tsp Salt
 3 tbsp Sugar
 1 tbsp Baking Powder
 2 cups Milk
 1 tsp Vanilla extract (optional)
 1 Egg
 1 tbsp Melted butter

Directions

Add flour, sugar, salt and baking powder to a mixing bowl. Mix ingredients gently to distribute evenly.

Next, crack 1 egg and add to the bowl.

Stir in 2 cups of milk.

Pour 1Tbsp of melted butter into batter.

Lastly, add in vanilla if desired.

Mix well for 30- 45 seconds to ensure there are no clumps. Let sit for 2-3 minutes.

Pour onto preheated skillet in 5 inch circles.

Flip pancake when bubbles begin to appear.

This batter will yield 10-12 5 inch pancakes.

Garnish with your favorite fruit.
