Melt butter in a microwave safe dish and add to a 9x9 baking dish. Be sure to coat all sides and bottom of dish evenly.
Take two everything bagels and tear them into pieces, next place them in the baking dish.
Cover the everything bagels with sliced smoked salmon pieces, capers and parmesan cheese then set aside.
Next, Mix the eggs, milk, salt and pepper and ricotta cheese together in a mixing bowl.
Pour wet ingredients evenly over the bagels and press down with a spoon to ensure all bagels are moistened.
Cover and chill for 2-24 hours.
Bake at 350F for 40-45 minutes or until the edges are golden brown and the center is set.
